Grapes: 100% Primitivo, soil: Mainly sandy clayey, planting density: on average 4000 vines per hectare, production area: Vineyards located in the provinces of Taranto and Brindisi, Exposure: South, altitude: 150 m above sea level. training system: mainly Apulian sapling espalier, vineyard age: on average 15 years, yield per hectare: about 65/75 quintals, harvest period: from the last ten days of August to the first ten days of September, maturation: in barriques for 6 months , ageing: in the bottle for about 3 months, colour: intense purplish red, nose: ethereal, fruity with hints of wild berry jam, spicy, taste: dense and soft, balanced and rightly tannic, recommended pairings: throughout the meal ( for land menus), red meat flavored with spices, complex and structured first courses.
