CHARACTERISTICS
Grapes: 100% Nerello Mascalese, soil: mainly sandy volcanic, planting density: on average 4000 vines per hectare, production area: Etna area, exposure: South-East, altitude: 500/750 m asl. training system: espalier with guyot or sapling pruning, vineyard age: on average 15 years, yield per hectare: about 70/75 quintals, harvest period: second ten days of October, maturation: in barriques for 6 months, ageing: in bottle for about 3 months, colour: intense purplish red, nose: the bouquet is delicate with hints of red fruits and irises with notes of mulberries, licorice and blueberries, taste: dense and soft, slightly tannic, recommended pairings: roasted meats or embers, game, roasted chestnuts.
