Grapes : 100% Aglianico, soil: clayey in Montemarano and Castelfranci , planting density: on average 4000 vines per hectare, production area : Vineyards in the municipalities of Montemarano and Castelfranci, exposure: South in Montemarano, East in Castelfranci, altitude : 450/600 m asl, training system : espalier with spurred cordon pruning, vineyard age: 15/20 years, yield per hectare: about 60/65 quintals, harvest period : Third decade of October/ first ten days of November, maturation : In oak barrels for about 30 months, refining : In the bottle for 10/12 months before marketing, colour : Intense red with garnet reflections, smell: hints of tobacco, wood, freshly roasted coffee, taste : dry , robust and tannic, recommended pairings : ideal with roasted red meats, game, dishes based on spices or truffles, hard and aged cheeses.
